Kitchen Dictionary: ketjap manis

A very dark brown, syrupy-thick Indonesian sauce similar to, but sweeter, and more complex flavor than, what we know as soy sauce. Ketjap manis is sweetened with palm sugar, and seasoned with different ingredients such as; garlic and anise. It is commonly used in marinades and to flavor Indonesian dishes. It is to be kept in a cool dry place. It can be found in most Asian markets.
