This is a classic New Orleans spicy, spicy sausage. Made from fresh pork and seasoned with garlic, cayenne pepper, ground black pepper, salt, ground bay leaves, paprika and sugar.
Grilled or pan-fried on the side with red beans and rice, or on a po-boy (sandwich), or even (sparingly) in gumbo. Add it to smothered vegetables, or use it as a breakfast sausage.
