A full-bodied, aromatic, slightly sweet and tart vinegar made from white Trebiano grapes. Balsamic vinegar ages to a dark brown with a full-bodied, slightly sweet flavor.

Season: available year-round

How to store: In a cool dark place for up to 6 months.

How to prepare: Used in vinegrettes and sauces.

Matches well with: steaks, strawberries, tomatoes

Substitutions: 1/2 cup red wine vinegar = 1/2 cup balsamic vinegar (significant flavor difference)
