Prawn Fettuccine in White Sauce

"A very tasty creamy pasta dish, good for cooking when you have company. Be careful though, you may have too much fettucine per sauce quantity so if this is the case, do not use all the fettucine as it will take away the richness of the sauce. Another alternative is to use rice as the base rather than the pasta."

  • Put fettucine on to boil in water with some oil and salt. Should not take long to cook.
  • In a large frying pan, saute onion garlic and spring onions until soft.
  • Add prawns and toss through until cooked.
  • Add white wine and stock and mix through.
  • Add cream slowly, mixing through until you get desired quantity but not too much otherwise it will taste of all cream.
  • Add cornflour to thicken the cream sauce.
  • Check fettucine is ready and drain if ready.
  • Add more crushed garlic to cream sauce if you think it needs more.
  • Add salt and pepper to taste.
  • In a large dish add hald fettucine and half the sauce and mix through. Then add the other half of the fettucine and the other half of the sauce and mix through.
  • Serve with grated or shaved parmesan cheese on top and warm oven baked dinner rolls.

Wonderful romantic meal my DH loved the prawns and he loves cream sauce added lots of fresh Parmesan cheese to the cream sauce instead of the cornmeal to thicken and we BBQ the prawns in the spring onions, garlic my DH's idea. We did forgo the rolls as we had cheesecake for dessert with a chocolate & raspberry liquor. I want to make this again without BBQ'ing the prawns.Very good!

I live in Perth, Western Australia. I am an Office Manager in a Mining Exploration Company. I love summer and going to the beach. I also like rugging up in warm clothing during winter. I love watching cable tv with my hubby on quiet nights at home. I love cooking with a glass of red wine but equally I like a beer or two! I have two cats who I adore but who live with my parents as our place is on a main road and I want them to have a long life. We have recently acquired 2 Jack Russell puppies who are so adorable. They are now part of our little family. DH and I like to get away down south of Western Australia at least 4 times a year. We are happy to stay in 5 star hotels or camp! Depends on the mood! We have recently purchased a block way down south of Western Australia in a little coastal town called Hopetoun. We are looking forward to building a house and spending a lot more time down there, with the view that we will retire down there and enjoy our fishing life. I am happy with my life and look forward to having children with my lovely husband.
