Apple-Gingersnap Crisp

  • Heat butter in a skillet over medium-high heat. Saute fresh apple slices 5 minutes, or until tender.
  • Stir in juice, sugar, fresh ginger and cinnamon. Cook 5 minutes, or until liquid is syrupy.
  • Add dried apple slices and candied ginger. Reduce heat to medium, and cook 3 minutes more, or until heated through.
  • Sprinkle bottom of a 2-qt. bowl with 1/2 cup crushed gingersnaps.
  • Stir remaining gingersnap crumbs into the apple mixture.
  • Layer apple mixture and yogurt in bowl.
  • Garnish with whole gingersnaps, if desired.

  1. Scrumptious. The textures of the sauteed fresh apples with the dried apples...and the complementary flavors of fresh and candied ginger are absolutely outstanding. I would give this many more than 5 stars if only I could.

  3. Oh My this is wonderful. I made just as stated and it was great. I love the texture the dried apples gave it and the flavor of the gingersnaps went great with the apples.
     
  4. We enjoyed this dessert although I had to omit the candied ginger as I did not have any, also I used Greek yogurt that is the only kind I use for all recipes, I increaed the apples to three, myself and DS loved this, thank you for sharing hon!...Kitten:)
     
  5. I was pleased with the way this dessert came together, & I like the taste of the apples & ginger cookies AND the yogurt! I was able to top it all off with some coarsely broken fresh ginger cookies that a neighbor brought over, & that added a nice touch! Thanks, yet again, for a great recipe!
