ingredients
- 2 1⁄2 lbs chicken parts
- 3⁄4 cup oil
- 3⁄4 cup lemon juice
- 2 teaspoons seasoning salt
- 2 teaspoons paprika
- 2 teaspoons dried basil
- 2 teaspoons dried thyme
- 2 cloves minced garlic
directions
- Combine all marinade ingredients.
- Add chicken and marinate overnight or at least for 8 hours.
- Grill chicken 20 minutes per side or until done.

I used 3 pounds chicken. Cut the oil to 1/3 cup,used the juice and zest from one whole lemon, used adobo salt, the basil and thyme was fresh. I added fresh minced garlic.I did marinate 24 hours. Grilled to brown on both sides then put on heavy foil to finish cooking. The chicken was very tender the skin crisp and flavorful.
