ingredients
- 8 ounces chorizo sausage
- 1 cup onion, diced
- 1 fresh jalapeno, diced
- 1 clove garlic, minced
- 1 (20 ounce) can Goya pinto beans, undrained
directions
- In a medium skillet, cook chorizo and drain if necessary.
- Add onions, garlic and Jalapeño, sautéing until soft.
- Add beans and let simmer for 1 hour over low heat and serve with tortillas, sour cream and salsa.

This recipe is easy, tasty and inexpensive. It was very spicy, which I like, but if you have picky eaters in your house, I'de be careful with the Jalapeno. My mother suggested using crushed red pepper instead of jalapeno, which I haven't tried but I'm sure would adjust the flavor. I will definitely make this dish again!

Pretty tasty- I think I would have enjoyed this much more if I had chorizo that was not cased in plastic!!! Ykes! I had to empty the casings and the chorizo was soooooooo greasy. Once I drained it, however, it all came together pretty well. I did add 1/2 small can of green Herdez salsa b/c I wanted more spice and only simmered for about 15 minutes- seemed to need more juice to simmer any longer. We served on fresh flour tortillas with guacamole, sour cream and tomatoes. Yum! Thanks for sharing, Rita!
