Tomato and Herb Bruschetta

ingredients
- 1 1⁄2 lbs plum tomatoes, halved,seeded and chopped
- 1⁄3 cup fresh basil leaf
- 1 tablespoon chopped garlic
- 1 1⁄2 teaspoons dried oregano
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- 1 teaspoon fresh lemon juice
- 6 slices crusty bread, toasted,1/2 to 3/4 inch thick
directions
- Mix first 7 ingredients in bowl.
- Season to taste.
- Cut toasted bread in half.
- Spoon tomato mixture on top of bread and serve.

This was a totally new experience for me. I was craving tomatoes and this was a perfect way have them! I made mine a little different--I bought garlic bread that was ready to put in the oven and then I layered some mozzarella on top and then added the tomato and seasonings last. It was done in less than 8 minutes and tasted absolutely awesome! This is a very fast and easy way to compliment just about any meal! Thanks so much for sharing the recipe!! This recipe will be added to my frequently used list of recipes!

OK, here goes. I live in Athens, Greece. I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages!
I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure.
So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call.
What did I do wrong?
Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths.
I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time.
