Best Broccoli Salad

"I made this salad for an end of school year pot luck. The following year I was asked if I would bring it again. People remember this salad from year to year. It can be made the day before and chilled - which is very helpful. It uses a full pound of bacon. The cook time is actually "chill time" in the refrigerator."

  1. Didn’t use as much sugar (used Stevia), as the raisins make it sweet already. I had sliced almonds, and I absolutely love this recipe, THANK YOU!

  2. This is one great salad. I've been making this for so long that I don't even remember where I got the original recipe. I think it called for sliced red grapes. What's so great about this salad is that you can use any nuts you've got on hand, or use raisins, dried cranberries or whatever. It'll still be delicious. I use Splenda instead of sugar. It really has to sit for at least an hour for the flavors to marry. Longer is better. I don't stir the bacon in until just before serving so it retains its crispness. This is an excellent side dish for literally everything. Especially good with BBQ and anything from the grill...even hamburgers. Fantastic alternative to potato salad.

  3. Ohhhh sooo good !!! I added some chopped mushrooms and a little Ranch dressing......PERFECT !!!

  4. I left out the bacon and used light mayo and it was still delicious!

  5. Great salad. Thanks for the recipe. Even folks who don't like broccoli like this recipe. My minor variations include lightly blanching the broccoli, substituting pine nuts instead of sunflower seeds, and using low fat mayo. Also, used red onion.

Tweaks

  1. Excellent salad! I made a couple minor changes - I used craisins instead of raisins, only used 1/2 lb of bacon and added an 8 oz can of sliced water chestnuts. DELISH!!

  3. I was searching for a recipe like this. I viewed a couple of the others but ended up with this one since it seemed to be what I wanted. I did not have the sunflower seeds so substituted chopped pecans. The other sub I made was instead of using the broccoli florets, I used broccoli slaw and rainbow slaw. It was a 12 oz bag of each. I used about a quarter of a medium red onion. Not a huge onion fan but it does add flavor. The results... FABULOUS! I tasted it after about 15 minutes and it was wonderful. An hour later and I wanted to eat the whole dish and not share. The dressing was a just right for the two bags. It coated it nicely without being soggy. The dressing is sweet with a slight tang that blends well with the other flavors. I made this with pulled pork sandwiches. I wanted something a little different than the traditional cole slaw. This worked perfectly. Thank you Trisha!!!
