Dad's Potato Pancakes

"When my dad made these people would come out of the woodwork to eat them! They smell so good cooking and we used to love them as kids. They also reheat well in the microwave."

  • Grate together potatoes and onion (or just do it in the food prossessor) Add next 3 ingredients and mix well.
  • Add flour to thicken and mix well.
  • Cover bowl with a plate (not air tight) and let stand 30 min.
  • Fry in little oil by tablespoons or a little bigger till lightly brown on one side,turn and fry again til golden.

  1. These are really wonderful! I gave the caraway a spin in a spice grinder just to break it up a bit (it was not fully ground) and had to drain quite a bit of liquid off the potatoes after grating (I used a food processor). I halved the recipe, using just two large potatoes and a small red onion. I added a little extra flour because there was so much liquid. These work well, no matter how big or small you make them (my first few were large, the rest a bit smaller). Thanks so much for the recipe!

I grew up in Ohio, have lived in San Diego and now reside in Georgia. Love it here! I am a stay at home mom and enjoy interior decorating, renovating and cooking up a storm!
