Tender Sour Cream Banana Cake

1 9x9 inch pan
ingredients
- 1 1⁄4 cups white sugar
- 1⁄2 cup butter
- 2 eggs, beaten
- 1 teaspoon baking soda
- 1⁄4 cup sour cream
- 1 cup mashed banana (use bananas that are turning black)
- 1 1⁄2 cups cake flour
- 1 teaspoon vanilla
directions
- Preheat oven to 350 degrees.
- Grease and flour a 9x9 inch pan.
- Dissolve baking soda in the sour cream.
- In a large bowl, cream butter and sugar until light.
- Add eggs and beat well.
- Add sour cream/baking soda mixture, mashed bananas and vanilla stir to combine.
- Add cake flour and mix well.
- Pour batter into a 9x9 inch pan and bake at 350 degrees for 45 minutes or until done.

<p>Mom of four -- a 13 year old daughter who is starting Eighth Grade, and a 11 year old son who is going into Sixth Grade. Our youngest daughter will be six and is starting Kindergarten this year and my youngest son is 3 and starting three year old preschool. The kids are not only busy in school but we've also got Basketball, Cross Country, Softball and Football practices to contend with and dance lessons for the little one! My husband and I have been married almost 14 years! I have loved to cook ever since I was a little girl, and have fond memories of helping my Mom and Grandma while growing up. I love to read cookbooks and cooking magazines as well as cooking supply catalogs (all those neat gadgets!).</p>
