Blueberry Buttermilk Pancakes

"I'm vacationing on Cape Cod and I'm screaming for blueberry pancakes! I can't have one without the other. Lucky for me, my beautiful sister-in-law Sophie loves to cook, bake and lavish us with a beautiful breakfast spread every morning. Her buttermilk pancakes are The BEST. She says the secret is to use real buttermilk and not regular milk. This is her secret to creating the lightest and fluffiest pancakes. Another secret is to place the blueberries in each individual pancake before you flip them. This keeps the blueberries evenly distributed so that you get a good handful in every pancake and a warm pop of sweet blueberry in every bite. A hint of vanilla brings all the flavors together. Serve with really good pure maple syrup and it doesn't get any more decadent than this!"

  • In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs, melted butter, and vanilla. Keep the two mixtures separate until you are ready to cook.
  • Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
  • Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Sprinkle a generous handful of blueberries on each pancake. Brown on both sides and serve hot with maple syrup.

  1. These are so good!!! I made them as written, but scaled back to 1/3 of the recipe. I made 3 pancakes and brushed each cake with some softened butter and then added a bit of whipped cream on top, and that was all they needed for me!! I have a bunch of batter left, so I froze that and will make it later with blueberries or maybe even strawberries. But I am sure they would be just great on their own!!   2. My granddaughter and I really enjoyed these tasty pancakes. They were light and fluffy, tender and oh so flavorful. Quick and easy to make with great results. Made just as written, wouldn't change a thing. I used organic wild blueberries, these little gems were perfect in the pancakes. Garnished with a little butter and pure maple syrup.   4. Fabulous! We loved how fluffy and flavorful these pancakes were. I made half a batch and it was plenty for three to four people. I used slightly thawed, from frozen, organic blueberries and pure maple syrup. Yum yum. Made for Spring 2014 Pick A Chef.
     
  5. These are very good! I loved being able to distribute the blueberries evenly. I made a third of the recipe, and got 8 large pancakes. I used blueberries off my sister's bush, and the flavor was just amazing. Only thing I might change is to reduce the amount of vanilla a bit. Thanks for sharing! Made for Zaar Cookbook Tag.
