- 1 cup grass fed stew beef chunk, diced small
- 1 large carrot, peeled, diced small
- 1 1⁄4 cups Simply Potatoes Diced Potatoes with Onion
- 1⁄2 cup frozen peas, thawed
- 4 cups water or 4 cups low sodium chicken broth
directions
- Cook the beef in a heavy sauce pan over medium low heat in a bit of olive oil until browned and cooked through, about 5 minutes. While the beef is cooking, dice carrots. Add carrots, Simply Potatoes Diced Potatoes with Onion to the pan with the beef. Cook until potatoes and onions are slightly browned, about 3 minutes. Add water or broth. Bring to a boil, then reduce to a simmer, partly covered, for about 20 minutes, or until meat is softened. Add peas and cook for 3 minutes Drain the stew, reserving liquid. Puree the beef and vegetables, adding liquid as needed to reach desired consistency. Can leave chunkier if older and can "pinch" food with fingers.
