Irish Omelette

  • Separate the eggs and beat the yolks and add them to the mashed potato, mixing thoroughly and then add the lemon juice, chives, salt and pepper.
  • Whisk the egg whites until stiff and stir them into the potato mixture.
  • Melt the butter in a pan and cook until the mixture is golden and then place under the broiler to finish and puff it up.
  • Serve immediately.

  1. This was delicious, and it's so easy to make. After I snapped a photo, I cut the omelet into 4 equal wedges and served them with buttered toast. It was really good and we really enjoyed the recipe. Thanks, Baby Kato.

  2. Unusual and tasty!!! Made exactly as directed in my cast iron skillet. It tastes kind of like a light, fluffy quiche. I topped it with a little shredded cheddar after putting it under the broiler and let it sit for a couple minutes to let the cheese melt. A delightful way to have breakfast, brunch, lunch or dinner.
     
  3. I didn't have any leftover mashed potatoes, so quickly sauteed a baby red potato, then added rest. Yummy, topped with ketchup, loved the lemon in it. Thanks!
     
  4. I believe that I used too much of the mashed potatoes as mine was a bit dry. I also sprinkled on some marble cheddar cheese because the omelette kind of fell apart when I flipped it. So, besides my mistakes with this recipe, it did have a nice flavour and I would attempt it again! Made for Went To The Market tag game. Thanks Baby Kato!
     
  5. my mom florence makes fluffy oven omelettes like these. shes never put in mashed potato. its very good .really extends the eggs. for mr picky i added bacon and munster cheese. make these they are good. cook until just set on bottom and throw in the oven is how we always did it. now i have to call mom to get her recipe lol thanks for jogging memory zaar world tour 8
