  • Put all ingredients in a blender or magic bullet. Blend until smooth. Let rest for 2 minutes so the bubbles can settle. Pour 1/4 of the batter into a hot pan greased with butter or pam spray. Cook for 2 minutes until golden, flip and cook 1 minute on the other side. Repeat with the rest of the batter. Serve with sugar free syrup (or any syrup of your choice) and fresh berries. A surprisingly satisfying substitute for the real thing. Tastes like skinny fried cheesecakes! Even if you aren't watching your carbs these are a delicious departure from the traditional doughy stack of pancakes. And you won't have the sleepy feeling that usually comes afterwards!

  2. Loved them. First time made them just as recommended. Today I made them and added 1 scoop of Muscle Milk Banana protein powder I read somewhere that protein powder makes them fluffier! It does. Cook on medium to one step lower. I served them with fresh blueberries and Sugar Free land O Lakes heavy whipped cream....oh my goodness....you could open a restaurant and only serve this! Delicious!
     
  3. These are wonderful! I add a tablespoon of unsweetened dried coconut per egg when I make these to add a little structure for easier flipping. Everyone in my family will eat them happily!
     
  4. These were really tasty pancakes! I had a little trouble with the first one; I think my pan was too hot but when I used a lower temp (medium) they cooked up just like regular pancakes. I enjoyed mine with syrup but I think they would be even better with fruit. Thanks for sharing your recipe! Made for Fall PAC 2012
     
  5. I have type 2 diabetes and gilbert's syndrome, so carbs and sugar are a definite no for me, so I've given up on treats, until I discovered this recipe for breakfast pancakes. Not something I 'm used to eating, but I've used this recipe to make sugar/carb free scotch style pancakes. I was going to show a picture, but I ate them all!
