Sweet Potato and Yuca Oven Fries

"These oven baked fries are very flavorful. Fresh yuca (cassava) is really hard to peel so this recipe calls for frozen yucca. If you can't find frozen yucca, just use more sweet potatoes. Recipe is from Ingrid Hoffmann."

  • olive oil, divided (more if needed)
  • 12 teaspoon chili powder, divided
  • 12 teaspoon ground coriander, divided
  • coarse sea salt & freshly ground black pepper, to taste
  • 1 -2 sweet potato, peeled and cut into 4 inch long and 1/4-1/2 inch thick fries
  • 8 ounces cassava (buy 8 oz frozen yuca)
  • sour cream, for dipping (optional)
  • sweet chili sauce, for dipping (optional)

  • Set one oven rack to the upper-middle position and one to the lower-middle position. Preheat oven to 450 degrees F. Line 2 baking sheets with aluminum foil.
  • Put the sweet potato fries in a large bowl and toss with 1 T of the olive oil, 1/4 t of the chile powder, 1/4 t of the coriander and some salt and pepper. Transfer the fries to a baking sheet and bake on the lower-middle rack until the sweet potato fries start to shrivel, about 20 minutes.
  • Meanwhile, bring a large pot of salted water to boil. Add the yucca and cook until tender, about 25 minutes, and then drain. Once the yucca is cool enough to handle, cut it into 1/4 to 1/2 inch thick fries.
  • Place the yuca fries in the large bowl and toss them with the remaining 1 T olive oil (add more if needed to coat them) and remainder of the chile powder, ground coriander and some more salt and pepper. Transfer the yuca to the second baking sheet. Move the sweet potatoes to the upper-middle rack and place the yuca on the lower-middle rack and bake for 10 minutes. Then turn both the sweet potatoes and yuca over and bake until golden crisp, 5 to 10 minutes more.
  • Serve accompanied by a bowl of sour cream and bowl of sweet chile sauce for dipping, if you like.

  1. We really enjoyed the sweet potatoes and yucca made this way. I made the sweet potatoes in the air fryer and the yucca in the oven. I did however use a bit more spice on both, but next time I will add more spice to the yucca because it’s can take more spice. This will definitely be made again and it’s got use turned on to trying more recipes containing yucca. Thank you, LIG, for sharing. Made it for the Joy of Vegetables.

  2. I really liked these, especially the yucca fries. Yes, they do get a little sticky when cooked but if you use a really sharp knife and take care when peeling them off the knife (LOL!), then all is ok. I tried some in the oven, but must admit I did the second half in the fryer. The yucca fries crisped up much better than the sweet potato ones. I loved the spice mix on these and dipped them in a homemade green tomatillo sauce. Yum! Thanks for posting! Made for CQ4.
     
  3. I loved the sweet potatoes with the sour cream and chili sauce. The cassava was rather bland and it was very sticky after boiling it making it hard to cut into fry shapes. I would make this again using sweet potatoes only.
     
  4. These tasted awesome! However, they didn't crisp up at all, and were impossible to dip into anything. But they tasted amazing. I don't know if it was something I did, or just the nature of oven baked fries to be on the mushy side? For the Culinary Quest.
     
  5. No yuca to be seen in Melbourne but lots of sweet potato !! And these fries were fantastic, just delicious, just the best !!! I have seen these prepared in bags at the supermarket but never bought them as I prefer to cook from scratch. I made two batches tonight and we shared them between three, served with sweet chili mayo. Thank you for introducing me to a very addictive and very yummy snack.
