- 4 egg whites (may use 2 whole eggs)
- 1⁄2 cup vegetable oil
- 1 teaspoon vanilla
- 1 1⁄3 cups sugar
- 1⁄2 cup cocoa
- 1 1⁄4 cups all-purpose flour
- 1⁄4 teaspoon salt
directions
- Heat oven to 350 degrees.
- Grease a 9 by 9-inch pan.
- Place egg whites in large bowl.
- Beat with spoon until frothy.
- Add oil and vanilla.
- Mix well.
- Stir in sugar and cocoa.
- Mix well.
- Stir in flour and salt until blended.
- (Batter will be thick.).
- Spread in pan.
- Bake at 350 degrees for 22 to 26 minutes.
- (Don't over bake!).
- Cool.

Well, I wouldn't call it a "nutritious snack", but it was awfully good! I'm on a dairy-free diet at the moment, and I've been itching for something sweet that doesn't have butter in it. This hit the spot. I used two eggs and 1/4 cup applesauce with 1/4 cup vegetable oil. I baked it in an 8x8 pan that had been sprayed with Pam for about 26 minutes. They were fudgy and wonderful. Made my day.

I had high expectations for these brownies, but they came out sort of dry and flat. I cut down the baking time by about four minutes from the minimum time, and swirled a little raspberry preserves on top, which I thought would help with the moisture, but nope. They weren't bad, but I won't make this again.
