  • Preheat oven to 350 degrees F.
  • Place potatoes and garlic in a lightly greased roasting pan; cover tightly with foil.
  • Bake for 45-60 minutes or until potatoes are just fork-tender.
  • In a medium bowl, blend mustard, butter and parsley; toss with hot potatoes.
  • Bake uncovered for 15 more minutes.
  • Serve immediately.

  1. With the exception of using small Yukon Gold's instead of the red's (what I had) I just followed the recipe. They came out just great. Well cooked and soft in the inside with a perfectly golden brown roasted outside. The mustard gives a very mice, not overpowering, flavoring that makes these special. I served them tonight with fish fillets and my portion of fish I rubbed in the bowl that had a light film of the mustard mix left in it. It added a very mild but nice touch to the fish as well.
     
  2. These potatoes were delish! We loved the mustard flavour in them. I did them in foil on the BBQ which worked well.
     
  3. Loved making these potatoes & used the smallest ones I could find! I cut them in half only, & another time would like to have them whole & serve on a counter of finger foods!   4. I had really small red potatoes, so I halved those and mixed them with some diced Yukon Gold. I had this with beef tonight, but think it would work equally well with chicken or fish. I really enjoyed the wonderful mustard taste! A nice twist to roasted potatoes. Thanks for sharing!
     
  5. I have made this recipe twice, and it went directly into the trash both times. The first time, I made it to the letter: quartered red potatoes, tight foil, 350, the works. The potatoes were BARELY cooked by the end. The second time, I cubed them, made the foil less tight, upped the temps to 400, and cooked for an extra half hour. The potatoes that time ended up halfway cooked. Clearly, red potatoes are either not meant to be roasted or need to be roasted for about 2 hours. I'm done trying this.

I am also&nbsp;married to my best friend, Jeff and have been since April 2005.&nbsp; I love cooking, hate cleaning and will do whatever I can to get out of it!&nbsp;&nbsp;I&nbsp;love grilling and baking.&nbsp;&nbsp;I do most of the grilling at my house, and bake for almost a week straight at Christmas time!&nbsp; I can make or will attempt just about anything,&nbsp;though I rarely make&nbsp;brownies, my husband's are the best!&nbsp; Homemade breads are not my friend, so I am always working on bread baking.</strong></span></p> <p><span><strong>As for recipe ideas (besides zaar) Cooking Light Cookbooks are my favorites.&nbsp; I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day!&nbsp; Over the past couple years with zaar, I have found tons of new recipes&nbsp;my family&nbsp;normally wouldn&rsquo;t eat&nbsp;but have been happily surprised with new favorites.</strong></span></p> <p><span><strong>I&nbsp;love to join in&nbsp;all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p> <p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes.&nbsp; Most of all though&nbsp;are my kids; being home all day with them is fun and challenging, but I wouldn&rsquo;t trade it for any salary!!</strong></span></p>
