Double Coated Chicken With Corn Flakes

"This recipe is from the back of the Kellogg's box . It is different than other baked chicken because it is dipped in batter and then rolled in cornflake crumbs producing an extremely crunchy chicken. I like to add some garlic powder to the batter and some smoked paprika to the flakes for an extra boost in flavor. I also suggest brining the chicken for four hours in 4 cups of water and a handful of kosher salt and a handful of white sugar. This makes your chicken very moist and flavorful and greatly improves the texture."

  • Place corn flakes in a shallow bowl and set aside.
  • In a medium mixing bowl, beat egg and milk and mix slightly. Add flour, salt and pepper. Mix until smooth.
  • Dip chicken in batter and roll in crumbs. Place in a shallow pan lined with foil or sprayed with Pam. Drizzle with margarine.
  • Bake uncovered and do not turn chicken at 350 for about 45-60 minutes.

  3. I can't wait to try this , it sounds like the way my Mom use to make chicken . I'm going to make it for a crowd but do a trail run with just 3 pieces first because I want to see if I can do all the prep work including rolling the chicken in cornflakes the day before . Has anybody tried this ? I think it will make the cornflakes crumbs soggy and unable to crunch back up in the oven but I got to find out .

  4. I made this as directed using both the garlic powder and Paprika (non smoked) options as well as corn flake crumbs. The only thing I forgot to do was to pour the butter over the chicken pieces. The results were excellent and this is now my very favourite oven 'fried' chicken recipe. Great crunch and super moist chicken. (I did brine it as well as per your instructions). DH has 4 pieces left over that he wants to take for lunch tomorrow. Opps - no, now he has 3 and if he isn't watchful he soon will have 2. ;)

Tweaks

  1. My tweaks: ignore Pam use parchment paper!! Clean up was a pain. Add heaping spices!
     
  2. i don't use salt but tossed in mrs dash. wonderful.
