Chuy's Hatch New Mexican Green Chile Sauce

  • In heavy-bottomed sauce pan, saute onions in corn oil until they begin to brown.
  • Add garlic and cook another 2 minutes.
  • Stir flour in with onions and garlic so that it thickens.
  • Add chopped chilies, beef broth and salt and mix well.
  • Bring to a boil and simmer 10 to 15 minutes to allow mixture to reduce.
  • The sauce should be thick enough to bind chilies and onions together.
  • Sauce can be refrigerated for three days, or frozen.

  1. We’ve been going to Chuy’s for years. This sauce is one of our favorites to munch on with chips at the restaurant and we always got some to go. I made it yesterday and its a SPOT on clone! It’s best served warm (with chips). I also made some enchiladas with it. A keeper. TY for posting. So lucky to live in CO and get fresh Hatch chiles every summer.

  2. Overall a great recipe to follow and sauce is amazing. The only thing I do differently is that I add about 3/4 teaspoon of brown sugar to the onions to get that extra carmelization going and then add the garlic and sauté another 2 minutes. I also get fresh roasted hatch green chiles from the actual Hatch, NM local market as I have a friend who frequents Hatch for work and picks me up a few canned jars. Great hatch green chile recipe!

  4. This stuff ROCKS! I have frozen roasted hatch chiles. So the was a breeze to make. We are addicted. I used this for a base on my chicken enchilada pizza. So I used chicken broth instead of beef. So yummy. Thanks!
     
  5. I have been using this green chile sauce for quite some time. It is unquestionable THE BEST green chile sauce. The only substitutions I make is I use chicken broth instead of beef broth because I use the sauce to make green chile, chicken enchiladas. I also cheat on the chile from time to time. Most grocery stores sell frozen roasted chopped green chile. It is a great time saver and makes the sauce so simple to make. Just be sure to thaw and drain completely when using as a substitute.
