Persian Style Onion Soup

  • Heat 2 tbsp olive oil, the onions and some seasoning. Cover and seat for 12-15 minutes until the onions are soft, lifting the lid and stirring occasionally.
  • Add the spices, dried mint and remaining oil, then stir in the flour, cook, stirring frequently, for 3-5 minutes.
  • Gradually pour in stock, whisking as you do so to prevent any lumps forming.
  • When it has all been added, drop in the cinnamon stick and simmer over a low heat, partially covered with the lid, for 30-40 minutes.
  • Stir in the lemon juice and sugar, then taste and adjust the seasoning. Discard the cinnamon stick. Ladle the soup into warm bowls and scatter over the herbs to serve.

  1. *Superb* I've had lots of onion soups before, but they have all had a beef broth base. This is so good with chicken. I also loved the spices, and I'd certainly not thought of adding cinnamon and mint. This is definately a keeper. I did have a problem finding fenugeek though. I found on the internet where you could substitute with mustard seed. I don't understand that, as apparently fenugeek has a bit of a licorice taste, but I went with the mustard seeds anyway. :D Thanks littlemafia for a wonderful taste experience.   2. Delicious! So full of flavor! I made this just as written, but my mint was fresh. This is even better when reheated since the flavors have time to meld. The fresh cilantro garnish is a must. Thanx for sharing!
     
  3. I do appreciate the ability to purchase so many things through Amazon, & that was where I got my fenugreek seeds for this recipe! I kept this vegetarian as I included some homemade vegetable stock that I usually have onhand! Most definitely enjoyed this one over any other onion soups I've had previously! Thanks for sharing the recipe! [Made & reviewed while in the Middle East with ZWT6]

  5. Hmmm, items got lost in my first review of this. This is truly an excellent soup! I halved the recipe, and an additional thought: I did not add the sugar. But that's me not having a sweet tooth. Will make this again. Made for Veg'n Swap Dec 2010.

I come from the land of Dracula and I have two little daughters; they're three years apart.I travelled a lot and I lived in Hungary,Croatia,Canada,Thailand,Japan and Iran(DH is from here). I've seen a lot of wonderful places, the travel bug is still in me but waiting for DDs to grow a little so we can go together. Lots of wonderful memories and hoping to add some more,but my travelling style has to be adjusted now.No more backpacking! I feel old,suddenly. My girls are everything for me and I'm lucky that I'm able to be at home with them.My life really changed since having them. I like eating healthy,DH works out a lot and taught me about the right foods.Right now I'm trying to lose a few kg,but I'm happy if I lose one kg/month. Never needed a drastic diet,I drink a lot of water and luckylly there's no McDonalds here(yet) to eat junk food. I prefer homemade cooking to restaurants, these days we can make a better tasting meal at home. I like knowing what goes in my food and what hands are cooking it. I always look at a chef's hands and believe me I've seen dirty fingers too! I came to the Zaar to look for a pancake recipe and now my refrigerator is full with jars of homemade stuff. I made a lot of friends and I enjoy playing in the tag games since receiving a premium membership gift from Sydney Mike. Thank you, Syd. I want to thank everyone who makes my recipes and takes the time to take photos. Sometimes I loose track and I can't get back to thank each person making a recipe. I don't mind if someone doesn't stick to the recipe,everyone's taste and needs are different,sometimes ingredients are hard to find and I know this better than most.
