  • Mix together 1 cup butter, 1/2 cup powdered sugar and 2 cups flour. Press into a 9 x 13 pan and bake at 350 degrees for 20 minutes.
  • While crust is baking mix together, eggs, salt, 4 Tbs lemon juice, 4 Tbs flour, 1 1/2 cups sugar and baking powder. Pour over crust and bake another 25 minutes.
  • Mix together 4 Tbs lemon juice, 1 1/2 cups powdered sugar and 2 Tbs melted butter. Drizzle over warm bars. Let cool completely before cut. I like to store mine in the refrigerator.

I have been cooking and baking since I can remember. I love to cook and bake, but I love to eat it even more!! I go absolutely nuts at Christmas time and bake anywhere from 30-45 items each year. I always bring about 4 large boxes up to our local organization that helps to feed the homeless in our area. I am far from an expert and am always looking for quick tips. I am a stay at home mom to two boys (and one large one, my DH) and am completely obsessed with reading recipes. I do not read "normal" books, I read cookbooks and recipes on the web. My favorite cookbooks are the local collaberation ones(like the good old church cookbooks). I LOVE trying new recipes. We rarely eat out, I have a hard time paying that much for something that I can usually find a recipe for on the web, plus after having worked in a few restaurants and seeing how they prepare food, can usually make it healthier, too.
