ingredients
- 2⁄3 cup oat flour
- 1⁄2 cup whole wheat flour
- 1⁄4 cup packed brown sugar
- 1⁄2 cup white sugar
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon baking powder
- 1⁄4 teaspoon salt
- 2 tablespoons ground flax seeds
- 1⁄3 cup light olive oil
- 1 egg
- 1⁄2 cup chocolate chips
- 1⁄2 cup dried cranberries
- 1⁄4 cup chopped pecans
directions
- Mix all dry ingredients in a medium bowl.
- Next add the oil and the egg.
- Mix well.
- Fold in chocolate chips, cranberries, and pecans.
- Shape into 1 inch balls (or use small cookie scoop) and place on cookie sheet covered in parchment paper.
- Bake at 350° for 8-10 minutes or until lightly browned.
- Let cool slightly before removing from cookie sheet.
