Closest Thing to Subway's Italian Herbs & Cheese Bread

"At least this is the closest one you'll be able to find. Most likely. It's not going to look like they're bread, but I heard if you freeze it, let it sit out for a bit, roll it and then put it in regular bread pans in the oven and cook it to about 350 it should turn out closer to it...... But I'm too scared to try that, if you try it and you like it let me know! This recipe came from MC-Recipe Digest V1 #583 by Barbara Zack on Apr 21, 1997."

  1. This has got to be better than Subway bread. I work at Subway. Italian herb and cheese bread starts out as white (italian) bread (every kind of Subway bread comes frozen as white or wheat) and is then rolled in a mix of herbs and salt once thawed, proofed to 75% the size of the final loaf, then sprinkled with Monterey cheddar cheese then baked. The only special part about Subway bread is what it is rolled in or sprinkled with. Otherwise inside it's plain white or wheat!

  2. Do you ever just get a random burst of motivation to clean your room, paint a masterpiece OR bake bread, at like 3am? Well, what up widdat? Excellent bread!

  3. I'm glad I reviewed the comments ahead of time I have it a little extra salt to my batter too

  4. That guy that said he works at subway is wrong. I'm a manager at subway. The Italian herbs and cheese seasoning is a simple mix of Parmesan cheese and oregano. What we do is spray our Italian dough stick with water , roll it in the seasoning , proof it for an hour at 95 degrees , afterwards bake it with Monterey shredded cheddar on top for 12 minutes at 350. Don't know how it would work out using different dough though.

  5. Not really like Subway bread. The texture is actually like Ciabatta Bread. But is a good bread. The second time that i made, i added about half teaspoon of salt and it tasted better

  1. Have you tried Chef Paul Prudhomme's "Herbal Pizza & Pasta Magic" — it has all those seasonings, incl. Parmesan, in it already (for without Parmesan, there's also "Italian Seasoning Magic") and a bit more for a more robust zest. And it creates a delicious combo...on pizza, pasta, etc. It's also a great way to transform a wrap into something more approximating Subway's Italian Herb & Cheese bread—sprinkle some on the ingredients before wrapping it up...and voilà!
