8 Minute Creamy Tomato Soup

"This is a heavenly, quick, delicious soup! I got this from a church dinner we had. The Pastor's wife hates to cook, and this is her favorite quick take...one taste and it is mine now too! Great for socials."

  • Melt Butter in 3QT sauce Heavy bottomed sauce pan. Add onion and sautee for 2 minutes. Add the tomatoes, chicken stock, and cream to onions. Bring to a boil, then simmer for 5 minutes.
  • Pour into food processor, blender, or use and imursion blender to mix until smooth. Pour into bowls, add your dollop of sour cream and ENJOY.

  1. This soup is so good. I didn't puree it. I made half the recipe and it was enough for the 3 of us. I added dry basil. Thanks Scarrier :) Made for All you can cook buffet
     
  2. Very good! I added freshly ground black pepper, and about 1/2 teaspoon sugar to the pot ~ made with half and half instead of heavy cream, and I garnished the soup with french fried onions! Made a tasty quick lunch; served with a toasted Swiss cheese sandwich.
     
  3. Simple. Delicious. I made this to serve with grilled cheese during a meeting. I used crushed tomatoes. Don't need diced as you are going to blend them smooth anyway.
     
  4. Maybe eight minutes with practice, but it took me a lot longer, partly because of a war with the blender. The soup, once finished, is very nice and doesn't taste like what you get in a can. My DH, who has a long history with tomato soup, took one look and made a grilled-cheese sandwich to go with it, a match made in heaven. Made for PAC.
