ingredients
- 2 tablespoons butter
- 1⁄2 cup yellow onion, chopped
- 28 ounces Italian-style diced tomatoes
- 1 cup chicken stock
- 1 cup heavy cream
- sour cream (optional)
directions
- Melt Butter in 3QT sauce Heavy bottomed sauce pan. Add onion and sautee for 2 minutes. Add the tomatoes, chicken stock, and cream to onions. Bring to a boil, then simmer for 5 minutes.
- Pour into food processor, blender, or use and imursion blender to mix until smooth. Pour into bowls, add your dollop of sour cream and ENJOY.

Maybe eight minutes with practice, but it took me a lot longer, partly because of a war with the blender. The soup, once finished, is very nice and doesn't taste like what you get in a can. My DH, who has a long history with tomato soup, took one look and made a grilled-cheese sandwich to go with it, a match made in heaven. Made for PAC.
