Casein Free Chocolate Coconut Avocado Instant Pudding

"This nutritious pudding takes 3 minutes to make. It's very rich so you don't need a large portion to satisfy. Kids love it and you can feel good about serving it. It makes fantastic fudgsicles and great ice cream if you run it through your ice cream maker."

 1. I wanted to give it 10 starts it is GREAT!! I did not use sugar I used vegetable glycerin. It was soooo good but I got a chocolate buzz :o) I had to give most of it away! My sugar freak friends did not like it much :( I thought is was a bite sweet the difference in taste buds or lack of taste buds.

 2. You should have seen the face of our youngest (gluten+lactose intolerant) DD feasting on this!! We made the chocolate ice cream, added a little vanilla and served it with ginger syrup. It was fantastic! The recipe served the four of us comfortably. Thank you so much for posting this!

 3. This is amazing! I made it because I had a very ripe avocado and only ten minutes to prepare something like a late lunch or early dinner today between two clients. My DH loves chocolate pudding and coconut, and normal milk doesn't like him - he was completely in heaven with this. The "fruity" note of the avocado combines perfectly with coconut and cocoa. Definitely a keeper!

Our family is gluten, dairy, corn, soy and nightshade free and feel much better for the diet change. I decided early on to make cooking and baking a hobby so I wouldn't feel hard done by having to make everything from scratch. Our diet is so much better now. I'm thankful to this and other recipe sites and the many living without bloggers for their great ideas and inspiration. I've chosen not to become a premium member so thank you everyone for reviewing my recipes. I hope they were helpful.
