Wine Bar Nut Mix

ingredients
- 2 cups pecans
- 2 cups almonds
- 2 cups walnuts
- 1⁄4 cup pure maple syrup
- 2 tablespoons extra virgin olive oil
- 2 tablespoons mixed herbs (rosemary, sage, savory and thyme, mixed and finely chopped)
- 1⁄4 teaspoon cayenne pepper
- salt & freshly ground black pepper
directions
- Preheat oven to 350 degrees. In a bowl, toss the nuts with the maple syrup, olive oil, herbs and cayenne.
- Spread the nuts on a rimmed baking sheet and bake for 15 minutes. (I place them on parchment paper for easy clean-up), stirring occasionally, until browned.
- Season the nuts with salt and pepper and toss frequently until cooled.

I often give nuts as a savory alternative to cookies or bars. Since I am preparing to clear out my current supply of nuts in preparation for the cookie baking season, I was looking for a "different" option and this fit the bill. The results are indeed unlike most spiced nuts, but just wonderful. Each bite is a complex combination of sweet, spice, grassy and salty. For mine I choose a combination of rosemary and thyme plucked from the garden. Glad I mixed as the rosemary alone might have been too strong and the thyme alone too mild. My nut combination included almonds, pecans and in place of the walnuts cashews, brazil nuts and peanuts. My biggest problem now is not nibbling so much there are not enough to take to a friend later this week. Made for Photo Tag.

These are great! I buy nuts in bulk at Costco, so making these at home is much cheaper than buying spiced nuts! I also like being able to control the amount of salt. Packaged spiced nuts are too high in sodium. Just the right blend of sweet and savory. I used 2 tablespoons of Herb de Provence, and the lavender added a nice taste. Made for Fall 2008 PAC.

I have two boys who will usually eat most things I put in front of them. As a single mom I use them as my guinea pigs....sometimes it works, sometimes it doesn't. I have a huge garden, blueberry and blackberry bushes. I am always looking for a new recipe. I have three cats (Xiao Mao, which means little cat in Chinese, Pumpkin and Max) and two border collies, Lucy and Grace. All my animals come from Rescue Agencies.
