  • In a large skillet brown the chicken in the oil over medium heat for 20 minutes. Sprinkle with 1/2 tsp salt and the black pepper. Remove the chicken and set aside. In the same skillet with the chicken fat, fry the onion, garlic and tomato for 2 minutes.
  • Add the rice and fry for 2 minutes more. Add the carrots, olives and capers and mix everything together.
  • Pour in the broth and chicken pieces.
  • Bring to a boil, reduce heat to low, cover skillet and simmer until broth has been absorbed, about 10 minutes. Add the green peas.
  • Cover skillet with aluminum foil and punch 8 holes in the top to allow steam to escape. Bake in a 300F oven for 30 minutes. Fluff up the mixture once or twice during the baking time.
  • Serve warm. Decorate the surface with the pimiento strips and egg slices and sprinkle with the cheese. The rice should be dry, loose and not sticky. Serve with fried ripe plantain slices, a salsa picante and pickled vegetables.

  1. I absolutely Love THIS DISH! So does my family. My fiance is Guatemalan and I like to find things to cook for him that are authentic to remind him of home, since he hasn't been there in so long. It is so good and simple, came out perfect from the directions. I was out of pimento pepper this time and added pickled jalapeno instead and it was great. Thanks for the recipe! This is the best one I've found.
     
  2. The flavor in this dish was really good, but the cooking time took a lot longer than stated. We ended up eating a late dinner, but luckily this was tasty enough to be worth the wait.
     
  3. Very delicious dish and great presentation! I used chicken thighs as we love dark meat. I like the idea of finishing this dish off in the oven -- it stayed really nice and moist. We garnished this dish with the pimento and some cilantro sprigs; however, I did leave off the egg slices and parmesan. Will definitely make this dish again! Made for Everyday is a Holiday tag, January, 2012.
     
  4. This is truly outstanding. Very flavorful and made with things I usually always have on hand. The only problem I had was that with the 1 tsp of oil ask for to make 2 servings wasn't enough to keep the chicken from sticking. Next time I'll use a spray of Pam under the oil. If you are a bit less lazy than I was and have the veggies all prepped in advance this will flow smoothly and quickly. This is so good it's going into my All Time Fav's book! :D
     
  5. Oh my, this is delicious! DH was two bites in when he stopped to declare "this one's a 5!" I used chicken thighs, olive oil, and a mix of brown and white rice as it was what I had on hand. I was slightly concerned about getting the brown rice cooked all the way since it generally takes longer, but that wasn't a problem. I also forgot to add the salt and pepper after cooking the chicken, and to be honest my chicken broth was salty enough that we didn't miss the salt and were able to add pepper at the table. I also skipped the garnishes and this was still a 10 star recipe. Thanks so much for posting!

I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
