Spinach Walnut Salad W. Raspberry Walnut Vinaigrette

"Easy Salad to throw together, and another one the "french chef" liked. Goes well with almost any meal. If you want to give it some kick, add some Feta Cheese!"

  • 2 cups Baby Spinach
  • 14 cup crushed walnut pieces
  • 12 cup fresh mushrooms, sliced
  • 12 red onion, sliced thin
  • 1 -2 whole strawberry, sliced thin
  • bottled raspberry walnut vinaigrette dressing (Ken's Steakhouse has a wonderful "lite" Vinaigrette)

directions

  • In large bowl combine spinach, walnuts, mushrooms, red onion, and strawberry slices.
  • Toss to Mix.
  • Just before serving add dressing to taste.
  • Divide among 4 salad plates and serve.

  2. Easy and delicious! I made it for my mother-in-law-to-be and she was impressed!! I used Newman's Own Lite Raspberry Vinaigrette and it was just perfect.
     
  3. Excellent summer salad. I used Dancer's Fantastic Raspberry Vinaigrette (#80764). The flavors nicely complemented one another and made for an enjoyable lunch. Thank you.
     
  4. This was easy to make, and perfect for a summer night with french bread and herbed cheese. We topped the salad with the feta cheese, as suggested, and it was very goood. Although we thought the recommended dressing was OK, I think we'll try another type next time. The raspberry dressing conflicted a little with the fresh strawberries for us. But, aside from that minor adjustment, it was an excellent salad!

I have a growing family - 3 horses, 2 dogs (1 being a Great Dane)!, 2 children, 2 cats and a boyfriend. I work quite a bit either at work or on the farm taking care of the "children" - my boyfriend is a stay at home "step-dad" to all and is a former chef so we like to find new ways to cook old foods. This year we will be growing an organic garden and I am ever so excited about it. Organics are a large part of our lives, and they can really put a strain on your pocket book!
