Guilt-Free Caesar Salad Dressing

"Calorie and fat reduced salad dressing for those who like Caesar salad but want to cut down on fat and cholesterol. I clipped this recipe from a recent Toronto Globe and Mail newspaper. We tried it last night and enjoyed it."

  • Combine cottage cheese, mayonnaise, anchovies, lemon juice, Worcestershire, garlic and olive oil in a food processor and puree until smooth.
  • Stir in Parmesan and season with salt and pepper to taste.
  • If dressing is too thick, thin down with a little warm water.

  1. *AWESOME* caesar salad dressing. I made this with the anchovies and one garlic clove, juice from 1/2 lemon. So easy to prepare in the food processor. I found that with the anchovies it didn't need the extra salt, it was just right for us. We love lots of fresh ground pepper. You have a winner with this recipe. Thanks Heather for sharing this one. Made for PAC spring 08.

I am in my second year of retirement and thoroughly enjoying it. My husband Ron and I have been married for 28 years and are the proud parents of 2 sons in their 20's. We have lived in Barrie, a growing city on the shores of Lake Simcoe in Ontario, for 30 years and have no plans to move anytime in the near future. Obviously, we like it here! <br> <br>I like to try different recipes and have found Receipzaar a great resource. Reading the reviews that others cooks have posted has also helped me become a little more adventurous in making adaptations myself. I have always been a bit of a slave to the written recipe and now find myself incorporating other suggestions and even making a few of my own modifications.
