  • Mix together chicken, oranges, cranberries, almonds and dressing.
  • Cover and refrigerate at least 1 hour to allow flavors to blend.
  • Top each cracker with 1 tsp of the chicken mixture.
  • Serve immediately.

  1. This was a nice new way to enjoy chicken salad. I am staying with my sister at the moment to help her after the birth of her first child. I doubled this recipe and served it as a sandwich rather than as the bites. It went down very well and allowed me to get meat, fruit and healthy nuts all into my sister at once. A good thing since she has been verging on the too tired to eat. We enjoyed the combination of fruits and the different sort of textures that came from the fresh and dried fruit and crunchy almonds. Made for Gimmie 5 tag.
     
  2. Easy to prepare, very tasty indeed and, for us, a recipe we'll enjoy again either as appetisers or, as made on this occasion, as a light meal for two. We enjoyed the chicken/mandarin mixture on toasted sour dough bread with sliced cucumber and salad greens. I used a low-fat basil mayonnaise and slivered almonds which I didn't include with the other ingredients in step one, but sprinkled on top just before serving. Great blend of flavours. Thanks for sharing this yummy citrus-lovers' recipe. Made for 1-2-3 Hit Wonders.
     
  3. These are out of this world. I didn't have miracle whip, so used mayo and a sprinkle of sugar and let the mandrain oranges drain for a while, then sliced them in thirds ( just like you said) and made sure to allow all the juice to drain, and used canned chicken breast from costco. Wow, what a super appetiser all of us enjoyed these tender morsels. Like Kitten said, I didn'd get near 48, more like 25 but what the hey, everyone enjoyed them. I put the filling in corn tortilla scoops for my wheat intolerant friend and she said they were to die for. Thanks for another Hokie keeper. Made for 123 hits. So glad I did.
     
  4. this was good but the canned chopped mandarin oranges made this a little thin, I used more than 1 teaspoon of filling for each cracker so I got nothing close to 48 next time I will squeeze out as much of the moisture as possible in the oranges and double the recipe, thanks Hokie!
     
  5. I also saw this from Kraft Foods. Easy and delicious, with a great blend of flavors!
