- 1 cup unsalted butter, softened
- 1⁄2 cup powdered sugar
- 1⁄2 teaspoon almond extract
- 1⁄2 teaspoon vanilla extract
- 2 1⁄4 cups all-purpose flour
- 1⁄2 teaspoon salt
- 1⁄2 cup pecans, finely chopped
- 1⁄2 cup walnuts, finely chopped
- powdered sugar
directions
- Preheat oven to 400 degrees. In a large bowl, cream butter and 1/2 cup powdered sugar until smooth. Add almond and vanilla extracts. Slowly add flour and salt to butter mixture, and mix until incorporated. Mix in pecans and walnuts.
- Use a cookie scooper to scoop the dough and then roll into balls (or use your hands to form 1" balls). Bake for 10-12 minutes. (These cookies barely brown, so if they don't look done, it's okay!).
- Roll in powdered sugar while still warm, and roll again when cool.

Whatever you call these cookies, they're great. I made mine using almonds since i needed to use them before too long. The almond is a phenomenal taste to these cookies. When i first coated these with the powdered sugar, i'm guessing because they were still warm, they appeared to be iced. After they cooled completely, i coated again and they indeed looked like snowballs. So glad i did not give up. Mine were the size of super balls and it worked well. I NEVER use unsalted butter for anything simply because i don't use it enough to bother spending money on. The salted butter worked just fine. Because the cookies themselves are not too sweet, the double coat of powdered sugar is a nice pick me up to these nutty treats. Will continue making these. I refrigerated the dough for at least an hour before rolling.
