Jazzy Broccoli Casserole

"This is a hit everywhere I go. If you like a little "heat" in your food then you will love this. this goes great with our Thanksgiving turkey and especially well with our Christmas ham. It's a staple every holiday in my family. Hope you enjoy also."

  • 1 (8 ounce) box chicken rice-a-roni
  • 1 (10 ounce) package frozen broccoli
  • 1 (10 3/4 ounce) can cheese soup
  • 1 cup sour cream
  • 1 (4 ounce) can green chilies, chopped
  • pickled jalapeno pepper (from the jar, I chop them fine and add the jalapeno juice for liquid to the casserole, now you see t)
  • 1 12 cups monterey jack cheese (shredded)

directions

  • Preheat oven to 350.
  • In sauce pan, cook rice according to package directions.
  • Cook broccoli until just tender and drain.
  • In large bowl, combine rice, broccoli, soup, sour cream, green chilies, jalapeños, jalapeño juice and 1 cup of shredded cheese.
  • Put mixture in a prepared casserole dish. Sprinkle top with remaining cheese. (You may want to cover with tin foil and uncover the last 5 minutes of baking).
  • Bake in preheated oven for 35-45 minutes.

My husband and I have been married almost 32 years.? We spent 23 years in the Air Force, traveling all around the U.S. and Japan and Portugal.? At the moment we are living in Fairbanks, AK.? My husband is a Safety Officer with the pipeline and I work for the Army in the Army Substance Abuse Program.? I have learned to try and love many cuisines.? I do believe that traveling and sheer necessity has brought me to my love of cooking.? We've raised 3 boys and at the moment we have 2 of our sons and 3 grandchildren living with us.? They are so thankful that Grandma likes to cook.? I think baking is my most favorite thing to do, but trying new recipes out on my family at dinner is always fun.? We've had lots of great new recipes and a few not so great but it's always fun experimenting.? I love Recipezarr for this.? It's truly an experience.? I haven't put in too many recipes yet, I still work full time but will hopefully soon.
