Frosty Pumpkin Ice Cream Pie (Oamc)

"A twist to an all time favorite. A make-a-head treat. ***Note*** Great for OAMC. This recipe is easily doubled and freezes well. If properly wrapped this will keep 6-8 weeks in the freezer."

  • To prepare crust:

  • Combine graham cracker crumbs with melted butter and sugar.Reserve about 3/4 cup of this mixture for topping. Press remaining crumb mixture firmly into buttered 9 inch pie plate. Chill 45 minutes before filling.
  • To prepare filling:

  • Mix together the pumpkin, brown sugar, salt and spices. Stir ice cream to soften; then fold into pumpkin mixture. Pour into prepared crust. Combine reserved graham cracker crumbs with chopped nuts; sprinkle nut mixture over pie filling and freeze until needed.
  • When ready to serve add additional toppings carmel and whipped topping.

  1. I always pre-bake graham crusts; this one had a little too much butter for that and the sides slumped. I was able to press them back up with the side of a metal measuring cup while it was still hot. The crust eventually solidified rock hard; it was very difficult to eat with just a fork. Next time, I might forgo the pre-bake. We used recipe #102281 as the filling and skipped the topping.

  3. What's not to like? I used some of the roasted pumpkin that we had leftover from Halloween, which we had frozen in vacuum sealed bags. I did not use the optional nuts, but I think that this would have worked well with pecans. Really great dessert treat and will make again. Made and Reviewed for 123 hit Wonders Tag - Thanks! :)

  5. Very easy and very tasty. Due to canned pumpkin sizes and ice cream sizes in the US, it was simpler to double the recipe to use up entire containers, which I did. I also used aluminum cupcake holders to make individual servings. From a double batch, I got 4 dozen cupcake sized servings. Great recipe!

I live on a very large farm here in West Virginia. We really do live off the land. I plant a large garden, I freeze, dehyrate and can everything possible. We raise beef cattle and hunt wild game. It's a family thing. I met my husband at work. We got stuck on night shift together and he seemed to grow on me like a wart. We married 5 months after we started dating. We have now been married 11 yrs. He's a great husband and father too our two children. Our oldest is in the 6th grade and youngest is in the 5th grade. We have lived all over the east coast. We spent 5 years in South Carolina. I would have to say it was a great 4 years. I learned so much about that area and experienced alot of different foods while there. I truely miss the people from there. A little about me. I'm a SAHM. Most of my time here alone is spent playing euchre, canning, gardening, cooking (a lot of OAMC), flipping thru my cook books (and i have plenty) and browsing thru Zaar! I just love it here. Trying to add a lot of our family favorites. I enjoy traveling, reading, camping, fishing, hunting, gardening, canning, bbq-ing, bon fires, entertaining, baking, playing board and card games with the kids, swimming, photography, and just being with family and friends. ~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~ How I rate: 5 stars ~ perfect, will make again without any changes. 4 stars ~ like it, will make again with minor changes to suit our tastes 3 stars ~ had to make major changes but got it to work for us. 2 stars ~ too many changes needed, waste of my time. 1 star ~ just terrible, couldnt get it to work out. waste of money and time.
