  • 4 cups Bisquick or 4 cups Jiffy baking mix
  • 3 extra large eggs, beaten
  • 2 12 cups club soda, room temperature
  • 14 cup melted Crisco shortening, room temperature

directions

  • Place the dry pancake mix into a large bowl.
  • Add the eggs, club soda and melted shortening. Use a wire whisk to mix carefully until there are no lumps (don’t over mix).
  • Allow the batter to rest while you preheat your griddle or skillet over medium-high heat.
  • Use about 1 tablespoon vegetable oil in the preheated skillet for each pancake; use 1/2 cup batter for each pancake.
  • Flip pancake only once when you see open bubbles appear on the surface and the edges appear dry around the pancake.
  • Makes about 10 pancakes 8 inches in diameter.

  1. Yuk. If perkins served me these pancakes, I'd demand a refund. I used Jiffy mix and followed the recipe to a 'T'. They were dry and crumbly and tasted like #%#*&^. Better to buy a Betty Crocker cookbook and make them from scratch!
     
  2. I wish I would have read the reviews prior to making this. The pancakes were dry and lacking flavor. Worst pancakes I have ever had despite following the recipe to a t.
     
  3. I have no idea what that recipe is suppose to be but it ain't Perkins pancakes. 25 lbs of flour 6 gallons of buttermilk 1-1/2 gallon of vegetable oil 48 eggs 11 cups of melted butter 4-1/3 cups of baking powder 3-2/3 cups of sugar 1-1/4 cup of salt 1 cup yellow Dye #5
     
  4. This tasted horrible. I followed it to the T also and it was tough, dry & tasteless. Not like any Perkins pancakes I've ever tasted either. But the kids liked it and that's all that matters.
     
  5. These pancakes didnt taste anything like Perkins pancakes, and I followed the recipe exact. They were ok, but I'm going to keep searching for something closer to duplicate Perkins recipe.

Tweaks

  1. I made these a little different than the recipe. I didn't have any Crisco so I used oil instead. They were WONDERFUL!! My husband doesn't usually care for pancakes and he loved these. He even asked me too keep some in the freezer for breakfasts. I don't know why they did what they did for Chef # 1178442, but these were moist and delicious. This is now my permanent pancake recipe!
