Creamy Un-Sweet Potatoes

- 3 medium sweet potatoes
- 1⁄4 cup shredded parmesan cheese
- 4 ounces cream cheese, cut in small cubes (neufchatel or low fat cheese is fine)
- 1⁄4 cup butter or 1/4 cup margarine
- 1 tablespoon fresh parsley, finely chopped
- 1⁄8 teaspoon garlic powder
- 2 slices bacon, crisply fried and crumbled
directions
- Scrub potatoes well; pierce with fork.
- Cook on high in microwave 6-8 minutes; actual cooking time may vary with size of potatoes and size of oven.
- Cut potatoes open and scoop out cooked flesh into medium mixing bowl. Add all other ingredients and mix well, until the cheeses and butter are incorporated, and potatoes are smooth.
- Spray a small casserole dish with cooking spray (I use an oblong ceramic baker, so it fits around other dishes). Mound the potato mixture in the dish.
- Bake in a 325 degree oven for 20-30 minutes (just enough time to rest and carve your turkey!) or until the "peaks" of the potatoes start to brown.
- Place a pat of butter on top and serve right out of the baking dish. Yumm!
- Serving size is for small dollops, as this is how many guests we have at Thanksgiving, there's hardly ever any left over, and we have lots of sides.
- To freeze for future use, cook as above. Let cool to room temperature, and spoon into zipper freezer bags in the quantity you desire. Labeling the freezer bags with contents and quantity before filling is recommended. Zip the bags closed and flatten to distibute mixture and "burp" to get rid of any extra air in the bag. Best used within 3 months of freezing.

This was really good. I had to skip the bacon because of bacon haters coming to dinner (who knew they could even exist?) but other than that followed the recipe exactly. My only problem was that they seemed a little thin. I think next time I'll just skip the butter in the hopes of thickening it up a little, plus the cheeses make it plenty rich enough

Wow, Cinnamon- what a winner you have here. I tried this last night, knowing the DH does not like sweet potatoes how I normally prepare them-smothered in brown sugar! Only alteration I made was to add cheddar instead of parm (didn't realize that I didn't have any!). I layered mine on the bottom of my 8x8, then layered regular mashed potatoes on the front (have seen this done in TOH) and baked together. You should have seen DH's reaction when he tried them- he LOVED them and said I could make them anytime. FANTASTICO!

Oh So Good! This was really a treat for me. I cut the recipe in half and froze one portion. Since I was just trying it for myself first, this along with some steamed green beans was dinner. I used neufchatel cheese and turkey bacon. Instead of garlic powder, I ussed quite a bit of roasted garlic....love the stuff! I plan to have these as another choice of sweet potato at my Thanksgiving bash this year. Thanks for sharing.

This was great! I love love love sweet potatoes, though my husband is not much of a fan. I had snuck 3 small sweet potatoes into the house (did I mention DH doesn't care for them?) and tried this recipe. We both loved it! I did use a little less than called for of the cheeses and butter, and I used light cream cheese. Still. :) I mixed it up in the stand mixer, and, rather than bake in one casserole, I divided the entire recipe into two ramekins and baked that way. The potatoes were smooth and creamy, with a lovely richness. Sadly, there were no leftovers. :( I'll plan to try this again to see how it freezes (although I can't imagine why it wouldn't freeze beautifully). Thanks so much for sharing! 06-06-08-Edited to Add - We froze this and defrosted for dinner last night -- it was still just as good as it was the first time! Yummy!

<p>My children are now both in college, and am currently caring for my Mom who is convalescing from a stroke. Volunteering has been my main form of entertainment outside the home, but getting out and about is hard to manage right now. Recipezaar forums help out, make me feel I'm participating in the real world. Have had many different types of jobs, but would like to go back to school to get an education degree as soon as Mom is better able to care for herself. Imagine! a new teacher over 55! Love baking, and still volunteer to run the Band Booster Bake Sale even though both my kids have graduated out -- the other volunteers and the customers are just wonderful.
