  • Season cornmeal with salt and cayenne.
  • Rinse fish, pat dry.
  • Dredge in flour, then egg, then cornmeal.
  • Bake at 450 on lowest shelf of oven for 10 minutes, turning after 5 minutes.
  • Serve with lemon.
