Pepper Vinegar

"Herbal vinegars make good marinades. Also try this with oil as a different flavored salad dressing. This also makes a pretty gift."

  1. Zippo! I made this using 1 cup of white wine vinegar and the full amount of pepper ( maybe a bit extra as I just poured the pepper into my hand to measure). I used fresh organic Szechuan peppercorns and it marinated for 5 days. I used it this morning in Recipe #259438. Update: Since first reviewing this on July 16 2011 I haven't been without this in my kitchen. I make one cup at a time, use 1/4-1/3 more pepper than ask for and just leave the pepper in the jar because it just keeps getting better. It's been great in everything from potato salads to Two Vinegar Carrots and a number of other things.

  3. I made 1 cup of this with white vinegar. After a week, I still don't taste the pepper. I'll try it again with white wine vinegar and more cracked peppercorns. Made for Zaar Tag.

Married mother of twins. I very seldom ever use recipes as they are written, always modifying and adjusting them. Many times I will take three or four different recipes and come up with a new recipe based on those. <img src="http://i42.photobucket.com/albums/e347/Saturn6666/KiwiDutch/3chefstag1.jpg">
