Salad
- 1 cup rice, uncooked
- 1 bell pepper, diced
- 3 medium tomatoes, diced
- 1⁄4 cup onion, diced finely
- 1 cucumber, diced
- 1 stalk celery, diced
- water

Dressing
- 1⁄4 cup red wine vinegar
- 2 tablespoons granulated sugar
- 1⁄2 cup fresh basil leaf
- 1⁄4 cup red onion, minced
- 4 garlic cloves
- 1⁄4 teaspoon fresh ground pepper
- 1⁄4 teaspoon salt
- 3⁄4 cup vegetable oil
directions
- Mix 1 cup rice with water, according to directions on bag.
- Cook until done.
- Let cool.
- Meanwhile, dice the veggies and put aside.
- Place all the dressing ingredients in a blender, except the oil.
- Blend until smooth.
- With machine running, add the oil.
- When rice is cool, mix with veggies and dressing.
- Cover and store in fridge for at least 3 hours (This really helps the flavors to meld).
- Serve cold and enjoy!

I live in Upstate NY with my son. Giovanni, my son, is a year. I enjoy playing with him, taking walks to the park, reading and, of course, cooking. Right now I am working towards my BA so my son and I can have a better life. In my extra time (haha..does that even exist), I love cooking. I love to experiment, my poor son is to young to verblize when he doesn't like something, but he sure knows how to throw the food :)! Cooking relieves stress and is just something I absoultly love.
