ingredients

  • 6 lbs skinless chicken legs
  • 34 cup spelt flour
  • 14 cup mesquite flour
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 12 cup cracker crumb
  • 1 teaspoon cajun spices
  • 12 teaspoon basil or 1/2 teaspoon oregano, crushed
  • 12 teaspoon powdered thyme
  • 12 teaspoon garlic powder

  • Mix all the ingredients except the chicken in a large bowl. Whisk together and combine well.
  • Moisten each piece of chicken one at a time then dip in the coating.
  • You can put this mixture in a bag and put a leg in the bag to coat or place some of the coating on a large plate and roll the chicken in it.
  • Place in a 350'F oven and bake for 45-60 minutes until the juices run clear.
  • Bon Appetit.

I enjoy oldies, classical and jazz music. My hubby is a Professional Jazz and Classical Musician. He plays with the Albuquerque Philharmonic Orchestra which is wonderful because I get to see all his concerts and they are free! We are trying our best to live a Green and Sustainable lifestyle which is no easy feat in a desert. I love any cookbook that promotes good health and tasty meals. I enjoy pasta dishes and sweet vegan deserts. I have found that I am very successful in converting conventional recipes to vegan. This has allowed me to enjoy all types of foods that I other wise could not. Some day we would like to relocate to upstate New York and be closer to my family in Canada and my husbands in New York. My DH retires in 9 years, so nothing will stop us from heading home then :-)
