  • Preheat oven to 350 degrees F. Grease and flour 2-9 inch cake pans.
  • Sift together flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, beat butter till creamy, add sugar until smooth. Add egg yolks, one at a time, beating after each addition.
  • Add flour mixture and milk alternatively, beginning and ending with the flour. Stir in vanilla, coconut ext, and 1 cup coconut.
  • In another bowl, beat egg whites till stiff but not dry and fold into cake mixture.
  • Divide the batter evenly between pans. Bake in preheated oven for 30-35 or until toothpick is inserted into the center of the cake comes out clean. Allow cakes to cool completely before frosting.
  • To Make Frosting: Blend butter and cream cheese till smooth. Add powdered sugar slowly. Add vanilla and coconut extract. Fold in shredded coconut. Spread on cooled cake.

  1. Absolutely delicious! I cut it down by 2/3 and made a single six inch cake. I didn't use coconut extract, just a bit more unsweetened coconut and the flavor was huge. It worked beautifully! I am going to be using this recipe to make a wedding cake, it's fantastic. Thank you!

Here i am again rating this Coconut Cake, i just took one out of the oven for my Sister's Birthday , she want's me to add pineapple in her's, i'll put it between the layer's. i'm thinking about making me one for my Birthday also.   4. I cannot believe this is ONLY the 4th review on this cake!!!<br/>I am not a "coconut" lover, the flavor is light in coconut. The cake is exquisite, thick, and one of the best I have had. Being that it is white, the frosting can be colored for a birthday. I have used it for my sons baptism, gave the recipe to a co worker for her sons confirmation. To identify it as "coconut" I had "tapped" the flakes over the frosting so you can see them. The frosting "makes the cake". Again: I'm not a big frosting person, (picky eater), the frosting is thick over the cake, and as explained above the cake is rich and moist. A nice scope of cake to frosting ratio is amazing. I make this for our potlucks at work and make sure i bring copies of this recipe. There is none left, I always grab a piece to take home before it is gone.<br/>Try it you will not be disappointed. I don't write reviews. but couldn't let this great cake only have 3!! People deserve to have some of this. You only live once!!!

  1. I didn't fold the coconut into the frosting as directed. Instead, I frosted the cake and then coated it in the coconut.
