  • Mix dry ingredients.
  • Beat together wet ingredients.
  • Add butter to egg and sour cream.
  • Add milk to sour cream mixture.
  • Mix wet ingredients into dry ingredients until just incorporated.
  • Add blueberries last and fold in carefully.
  • Preheat lightly coated griddle or skillet over medium heat.
  • If you are using an electric griddle, set temperature to 360°F.
  • Test by adding a few drops of water on hot pan. When the drops start to "dance" on the griddle it is time to cook.
  • For each pancake, pour about a 1/4 cup of batter onto a hot griddle.
  • Cook on first side until bubbles that form begin to pop and edges look dry.
  • With a spatula, turn and cook until the second side is rich and golden-brown.
  • Serve with Maine Blueberry Syrup or honey.

Questions & Replies

  1. I am a bit confused by the instructions for the wet ingredients. When it says to "beat together the wet ingredients" exactly which ingredients are meant? I would think that the milk, egg, sour cream and melted butter would constitute "wet" ingredients but the next set of instructions seem to contradict that. I definitely want to try this recipe but I want to do it right. I'd appreciate any clarification!

  5. I made this blueberry pancake recipe followed exact, except I am trying to cut calories so I used coconut sugar and coconut milk it came out delicious.

  1. Great recipe! Extra delicious with 1/2 & 1/2 cream substituted for the milk, 2 tablespoons toasted & ground coconut flakes; used hand mixer on lowest speed to combine wet and dry ingredients, let stand for 1 minute before folding in floured blueberries-the result is extra fluffy pancakes!!
     
  2. We are dairy free so we used almond milk in place of cow's milk, fractionated coconut oil instead of butter and plain goat yogurt instead of sour cream. Oh and we used frozen blueberries because we didn't have fresh on hand.
     
  3. I didn't have sour cream in hand, so instead I used Siggis 4% milk fat plain yogurt- it has the same consistency and taste as sour cream! I also added a teaspoon of vanilla extract. The pancakes were a success- my family loved them. They tasted creamy and buttery, I definitely recommend this :)

  4. This recipe needs to be edited. Where is says "beat the wet ingredients," I think it means to beat just the egg and the sour cream, because then it says to add the milk and the butter. You should probably say to use a whisk, because I assumed it said to use a mixer and that wasn't necessary. I also added a teaspoon of cinnamon to the recipe and a teaspoon of lemon zest. I used soymilk instead of milk and Earth Balance Coconut spread instead of butter. The flavor was ok. Next time I would use applesauce instead of egg because I didn't like the taste of the egg in it.
     
  5. Batter was thin but they came out delish! I used yogurt instead of sour cream cuz thats what I had.

Zaar...Wow, what a place! I'm one of the old timers of Zaar. I can't count the number of wonderful dishes I cooked in the past few years since joining. Along the way I have had the pleasure of meeting several Zaar chefs. Talk about your fruits and nuts! lol. I have enjoyed meeting them all. Family: What's to say...I have had the same sweet husband forever (Good thing....I'd hate to have to break a new one in...=) and live close to a couple of grown children. (Maybe you've met Smoke Alarm Jr. ..her brown rolls are sooo good!) Therefore, my family gets together often to enjoy each other's company and cooking. My greatest joy is six "little to tallerthanme" kids running around calling me Grammy. They wear me out! lol For the past thirty years I have been a Special Education teacher for grades 9-12 and love it. Took some time off last year to recovery from surgery, chemotherapy and radiation for breast cancer. (Loved the radiation....I keep imagining that we are absolutely napalming the nasty cancer cells tohellandback to keep the little suckers from returning. =) My prognosis is good and now "I'm back in the saddle again". lol. Being a north country "gurl", I am happiest outside...walking, fishing, sitting in front of an outdoor fire or being on water (although in February it's a bit stiff....=0) When indoors I like to read, garden, knit, quilt and paint. During cold Maine weather I like to warm my feet on a very large ( 100 pounds of long legs and huge feet), sweet and furry golden retriever named Kerry (aka KTBRD: Kerry the big red dawg..lol) . In the summer, the dawg and I round up the grandkids, hit the local dairy bar for a Mounds Sundae that is to die for!!!=0) . Then spend a lot of long and lazy summer days at camp . All in all...Boy, Life is good! =)
