Savoury Filled (Stuffed) Tomatoes

"I got this recipe from my old home economics cookbook. I had a look at the other stuffed tomato recipes but there was nothing close. This is an extremely simple & tasty side dish."

  • Cut a slice from the top of each tomato and reserve, scoop out the centre of each tomato & chop.
  • Fry bacon & onion for 1 min, add parsley & breadcrumbs, pepper, butter and tomato centres, mix together over heat for another minute.
  • Refill tomato cases and replace tops.
  • Bake at 180.C for 15-20 minutes.

  2. Really enjoyed this recipe, as it is especially suitable for Weight Watchers. I didn't have parsley so used fresh basil which was wonderful with the other flavours in this dish. I'll return to this recipe often!

  4. I used 1/4 cup fresh bread crumbs, added 1/2 tsp. garlic powder, and sprinkled parmasan cheese on instead of replacing the tomato cap. These were excellent.
     
  5. I loved this recipe. I used Baco's (veggie bacon flavored bits), red onion, Italian seasoned breadcrumbs. I discarded the tomato seeds so I didn't have much to add to the stuffing but it came out very well indeed. Quite tasty, easy to make and easy on the diet. It also looks lovely along side of your entrée. Well done Mandy.

Tweaks

  1. This came out really good! I had the problem of using imitation bacon bits instead of bacon due to kosher restrictions and they turned pretty soggy. I'm not sure if the taste I got is what you get with bacon, but it was really good! Next time I will either leave out the bacon bits, or fry them up in the beginning and take them out. Thanks for this recipe!

Melbourne I live on a 5 acre property in the Dandenong Ranges Victoria, Australia, having moved from the burbs when I became pregnant with my now 15 year old daughter Alyssa. Once my daughter was born I became a stay at home mum as I couldn't bear the thought of putting her in daycare. She is the light of my life, I never imagined myself as a mum when younger but now wouldn't have it any other way. Alyssa was made a big sister on the 19th April 2010 when our cheeky little boy Blake was born. I love cooking and experimenting with new recipes so quickly become addicted to Zaar as it was previously known & still use it regularly. In addition to being my kids taxi :lol: I also spend my time, reading, gardening and of course shopping. I'm lucky enough that we have the space & so love growing our own fruits, vegies & herbs, this also means we have plenty of room for animals & at the moment have 2 dogs, Max, a Jackshund who's 6, Fletcher, a Kelpie who's 4, 6 cats Snowpea, Fergus, Ginger, Tango, Annie & Cookie, 4 chooks & 2 Ducks. As well as our pets, we also have a lot of native animals around our area, we have kangaroos, wombats, echidna's, possums as well as rosella's, galah's & Cockatoo's hence the name of where I live..
