Ginger Chicken & Shrimp Stir-Fry With Sesame Noodles

"Another recipe from Rachael Ray's April 2007 magazine with our variations. (We added shrimp and red peppers and left out the small head of Napa cabbage)."

  • Cook spaghetti until al dente. Drain in colander.
  • While noodles cook, heat olive oil over high heat until rippling in a large nonstick skillet.
  • Add chicken and stir fry till golden. Add scallions, mushrooms, red pepper, garlic and ginger and stir-fry 2 minutes. Add shrimp after 1 minute. Season with salt and pepper and keep warm.
  • While spaghetti drains, add sesame oil and soy sauce to pasta pot. Add spaghetti and toss to coat.
  • Either add stir-fry to noodles and toss to mix or serve stir-fry on top of noodles.
  • Top with toasted sesame seeds.

  2. This was fantastic! I loved the toasted sesame seeds in this. I omitted the shrimp, only because I didn't have any. But it was great without it. I used whole wheat linguine, because thats what I had on hand. I also cut back the size to make for one. All in all, great flavor and an easy recipe. Thanks anonymous for posting this recipe.

  4. Perhaps i miscalculated the proportions or my expectations of this dish were somewhat different but i was a bit disapointed w/ the outcome. However, this is not to say this dish is BAD! I would have probably minced the garlic instead of pressing them and i would have sauteed the prawns with some chilli flakes and garlic as well for a bit of taste! Also, if u do not have the right amount of spaghetti on hand, dont fret! this is easily enough for 8 people!

I've been a student, a teacher, and a student again. And now I've moved (or, rather, am currently in the process of moving) to British Columbia because I fell in love with a writer, who I met online because he was looking for an editor--or at least an honest opinion. My husband and I have the most intense differences of opinion regarding his writing and how we do things in the kitchen. He's a "chop it up small and throw it in a dish" kind of a guy, and I prefer to follow recipes that others have had success with. Our adventure with making blackberry jam and jelly a few years ago brought out some claws, mostly because he didn't want to follow directions. None of it jelled, so now we have jars of (very yummy) blackberry syrups, because we're not really interested in redoing the whole process.
