The Best Buttermilk Pancakes

- 1 1⁄3 cups buttermilk
- 1 egg, beaten
- 1 1⁄2 cups flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 3⁄4 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄4 cup butter, melted
directions
- Combine buttermilk and egg.
- Add dry ingredients and mix until blended.
- Add butter.
- Pour onto hot griddle. Flip when bubbles start to break and edges appear dry.
- (If I don't happen to have buttermilk, you can sour milk by adding 1 tsp of lemon juice and letting it sit for 15 minute or so.).
