  • Preheat oven to 400 degrees F.
  • In food processor, pulse almonds, bread, and pepper until coarsely chopped; transfer to waxed paper.
  • In pie plate, mix sour cream with 1 tablespoon barbecue sauce.
  • Dip chicken into sour-cream mixture, then into almond mixture to coat, firmly pressed so mixture adheres; arrange on ungreased cookie sheet.
  • Bake until chicken looses its pink color throughout, 12 to 15 minutes.
  • Serve with remaining sauce.

  1. Delicious and easy recipe. I used the original Sweet Baby Ray's bbq. My grocery store also did not carry the smoked almonds but followed the recommendation of another reviewer and used liquid smoke. I added 1 tsp of liquid smoke with 1/2 cup unsalted, blanched almonds and a dash of salt. I roasted the almonds in the 400 degree oven (with the liquid smoke) for 5 minutes and then followed the food processing instructions. Great!!
     
  2. Very, very good. I also didn't have the smokehouse-type almonds, but I did have bulk slivered almonds. I toasted those briefly in a skillet and then added kosher salt and a dab of liquid smoke as was suggested by someone else. Using Jack Daniel's Spicy sauce it was quite good. The DH practically howled and barked at the moon, which is always a good sign. I also took Susie D's suggestion of the Rosemary Potatoes and that went over quite well too. A successful supper!!!

The chicken has such a nice flavor and came out with a crispy coating and moist interior. I served with recipe #222479 and Recipe #16859. Thank you for sharing a recipe I will use again!   4. We thoroughly enjoyed this chicken! I did not have smoked almonds so I added some liquid smoke and kosher salt to the almonds and roasted them before processing them. Delicious breading!!! The chicken was so moist I could easily cut it with a fork. Our breasts were a bit thick and took about 22 minutes to cook through. I mixed half of my Carolina bbq sauce with half kraft honey BBQ. Again, delicious! Thanks Ma Hiker for a totally awesome dinner! ZWT3
     
  5. What a great way to serve chicken! I had never thought of using smoky almonds as coating - the chicken was moist and the salty almonds just made it soooo good!! I didn't have any fresh bread, so used some dried breadcrumbs I had. Forgot to serve with sauce, but it was so flavourful that I didn't miss it! Thanks Ma Hiker! Made this for PAC 2007.

I have been a member of recipezaar and food.com for years. This is definitely my go-to place for recipes and love that I can have all my individual cookbooks to sort and store recipes. ? I like to experiment when I cook and find that I rarely follow a recipe as it is written. I am also pretty health conscious and try to cook low-fat for regular everyday meals (you can't skimp on the rich stuff for holiday meals & treats!). I also avoid processed foods and use fresh wholesome ingredients whenever possible.
