Lemon Lovin' Asparagus

- 1 lb asparagus, tough ends trimmed
- 1 lemon, thinly sliced
- 2 teaspoons extra virgin olive oil
- 1 tablespoon chopped fresh oregano (fresh is better if you have it) or 1 teaspoon dried oregano (fresh is better if you have it)
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon fresh ground pepper
directions
- Preheat oven to 450°F
- Toss asparagus, lemon slices, oil, oregano, salt and pepper on a large rimmed baking sheet. Roast, shaking the pan occasionally to toss, until the asparagus is tender-crisp, 13 to 15 minutes.
- Serve hot or at room temperature.

We loved them! I made a special Valentines dinner for my BF Mike and I, and this was the side dish that I made to help complete our meal. I picked these specifically because they had the addition of lemon which I thought would compliment the main course. We enjoyed them so much! They were simple and quick to the table which made preparing my special meal easy. We both give this five star winner our highest praise and we will now have them often since asparagus is one of our favorite veggies. Cassie

<p>I come from a long line of wonderful cooks and doing my best to hold up that tradition. My great-grandparents owned a coffee shop; my Nana was also a great cook and started the tradition of baking around the holidays, both cookies and fruitcakes.
