Loaded Baked Potato Soup (Gluten Free)

"This soup is so easy to make and yet so delicious. You can very easily whip up a bowl for lunch or dinner when you are in a big hurry. Leftovers of this soup reheat beautifully for lunch or dinner the next day. Just save some of the toppings for sprinkling or spooning on the next day. I really love this soup. As a celiac I often eat soup for lunch. This is one of my favourite soups. I hope that you enjoy it as much as I do!"

  • Pierce potatoes; microwave on HIGH for 5 minutes, turning over after 2 1/2 minutes.
  • Cut potatoes in chunks. Combine potatoes, broth and milk in large microwaveable bowl. Microwave on HIGH for 6 minutes, stirring after 3 minutes.
  • Slightly crush potatoes with a potato masher.
  • Reserve 2 tablespoons each of bacon and cheese and 1 tablespoon of the onions for topping; set aside. Add remaining bacon, cheese and onion to soup.
  • Serve topped with reserved bacon, cheese, onions, and sour cream.

  1. The ingredients were great together. I must say I didn't completely follow your directions. I ended up peeling and dicing the potatoes, and then boiling them in the chicken broth. I then scooped about 1/2 of the potatoes out and blended them with milk, added them back in with the broth and then continued as normal, but it was delicious! Tasted better the next day.
     
  2. I found this while looking for gluten free recipies for my sister who was just diagnosed with celiacs. It looked so good I made it for my husband and 3 yr old daughter. We loved it!!! Three weeks later my daughter was thinking of what she wanted to eat and after thinking a few min. asked for "play dough" soup. I asked her if she meant potato soup and she said yes. We have since renamed it play dough soup for something fun. It is one of a few recipes that she digs into and eats till it is gone!! Thanks so much for this GlutenFreeGirl. It is the best!!!
     
  3. I LOVE this recipe. I have always loved potato soup and have always made it with carrots, onion, celery and ham. I made this recipe and found it to be a delightful change of pace. The second time I made it I included a slice of ham cut into small pieces. Awesome. I now make it at least once a week. So easy to take to work as it does heat up beautifully! THANK YOU!

  5. Another winner here! This was the best potato soup ever, the cheese made it just nice and gooey enough but let the potato flavor come out. Usually I open a can of potato soup cause it can be time consuming to do homemade but this made it so simple I won't ever buy another can of that "other stuff" again. The bacon was a perfect touch as well. Thank you for posting this GF Girl, it will be made alot.

I also have a severe peanut & nut allergy, so cooking is quite a challenge at times.Some of my favourite things to do are cooking, scrapbooking, baking,reading, knitting, crocheting, and watching movies. I have just started to get the hang of this tricky gluten free diet. It really is ALOT harder than it seems.But however, I am determined to make the best of it. I very much enjoy cooking and baking, so I have been buying every gluten free cookbook I can get my hands on and every moment I get, I try to test out some of these new recipes. However frustrating and difficult it's been trying to experiment with all these new flours and ingredients, it has been alot of fun, and everytime I find a good reipce, it makes it all worth it. I want to find as many wonderful and delicious gluten free recipes as I can, and post them all on this site. I know how hard it is when you are first diagnosed, and I want to help others who have recently been diagnosed or just others that have celiac disease that need some great gluten free recipes. Celiac disease is something that we have to live with everyday, so it's important that we make the best of it.For sure at least one good thing has come from having Celiac Disease, I have become a better cook and have truly cherished the moments that I spend in the kitchen. All the recipes that I post on this site I have made and I have found to be very good! They are all gluten free! Some of the recipes use special ingredients that you can buy at specialty health stores, and some of them are recipes that you can make with ingredients bought right at your local grocery store. My recipes that use special flours etc. are named starting with gluten free [ex. Gluten Free French Bread], and the recipes that use everyday ingredients end with the word gluten free in brackets [ex.
