Eggless Banana Bread

  • Preheat the oven to 350 degrees.
  • Mix the first five (dry) ingredients together in a large mixing bowl.
  • In a separate bowl, mash the bananas well.
  • Stir the butter or margarine, vanilla extract and applesauce into the bananas.
  • Add the banana mixture into the mixing bowl with the dry ingredients.
  • Mix gently by hand, just enough to form a thick, clumpy batter. If the mixture seems too dry, add more mashed banana or applesauce to adjust the consistency.
  • Fold in chocolate chips and/or walnuts, if using.
  • Pour batter into greased loaf pan and bake for 45 minutes or until the bread is a deep golden brown and a knife inserted in the center comes out clean.

  1. I've tried this recipe twice and both times it took almost 20 minutes longer than stated 45 minutes to bake completely. Has anybody else experienced the same? My gas cooking range has a convection oven and I usually do not experience longer than recipe specified baking times. Does baking two loaves at the same time make a difference? Thanks for any input!

  1. This is a good recipe with one exception, too much salt. Next time I make this I will use 1/4 teaspoon. I added 1 teaspoon baking powder and cut down on the sugar by adding agave nectar. moist recipe.

  3. Received a ton compliments! Everyone wanted the recipe! I used all white flour, and 1/4 teaspoon salt. Melted margarine. Added 1/2 teaspoon pumpkin spice along w/vanilla. Skipped chocolate chips, added 1/2 cup dried cranberries along w/walnuts. I did add another tablespoon of applesauce to give the batter a smoother consistency. Never going back to the egg recipe!
     
  4. This turned out really good! Changes I made (mostly because of what I had on hand): used only wheat flour, added 1/2 tsp baking powder, used 4 med-large very ripe bananas, 1/2 cup sugar total (1/4 sugar & 1/4 erythritol), 3/4 tsp vanilla, 3 tsp wheat germ oil (didn't have applesauce), some cinnamon and cardamom, and a handful of chopped walnuts, pumpkin seeds and chocolate chips. Baked it in a toaster-convection oven in two small pans and came out perfect!
     
  5. Absolutely delicious! I only used white flour, and put in 1/2 cup of trail mix to replace the chocolate chips and walnuts. Also I didn't have applesauce so I mashed and nuked a 1/4 peach for 20 seconds to make it "saucy" and it turned out really well! My husband and my colleagues are all going nuts over it!

  1. I used half cup whole milk instead of the apple sauce, and it still worked. A very good recipe!
     
  2. Eyeing the 3 extra ripe bananas this morning at my daughter's house, I offered to make the eggless banana bread recipe, even though there was no applesauce. I got to assembling the dry ingredients, but when I turned around to grab the bananas, one was missing! My son in law must have inadvertently burgled the banana when I wasn't looking! Here are my subs and tweaks: 1 large grated apple instead of banana. 1 large egg to replace the applesauce. (I suppose if you are allergic to eggs, more apple or oil could be used.) 2 dashes of cinnamon. 1 dash of nutmeg. I barely want to know there is nutmeg but I like the boost it gives the other flavors. Overflow the vanilla (because I'm a vanilla freak). Chocolate chips mixed in but a sprinkle of chopped walnuts on top for crunch. It maintained the full banana flavor and was perfection! ps My daughter is lactating so I added a tsp of ground flax seeds. If you want it to be a true lactation recipe, increasr the fax, add debittered brewers yeast, chia seeds, and mix in more walnuts.
     
  3. I used vegetable oil instead of butter, half brown and half white sugar, all purpose flour with a small amount of coconut flour. I doubled the recipe, but I felt that I didn't have enough banana purée, so I opened a can of sliced carrots, mashed those, and added to bananas lol! It was delicious!
     
  4. This is the best banana bread recipe that I have tried, even from the ones with eggs, loved it! Made following changes - Quarter spoon of cinnamon powder instead of vanilla (was running out!) Half a cup of flavourless oil instead of applesauce. 3 tablespoons of yogurt and a tablespoon of milk instead of butter. Loved the recipe, the house is smelling ??
     
  5. This is my new favorite banana bread recipe, and I have tried MANY different recipes, with or without eggs. This is the best! I first searched for an eggless banana bread when I ran out off eggs. The first recipe I tried was okay, but had a weird consistency when I replaced some of the butter with applesauce. So when I found this recipe I knew that I would have to give it a try. The second time I made this I even forgot to add the butter, but it came out great! From now on I won't even add it any more. Saves money and calories!
