Grilled Fresh Summer Corn Kabobs

  • Thread veggies alternately onto 8 long *skewers. (*If using wooden ones, soak in water first.).
  • Combine remaining ingredients, brush part of mixture over veggies.
  • Place skewers onto grill about 6" above heat.
  • Grill 20 minutes, turning and brushing veggies with butter mixture.

  1. Made for a great side when grilling. Find brushing the veggies makes for very good tasting veggies - especially when the seasoning are of the change of pace kind, Made as posted - couldn't decide on the onions so used both red and sweet white.

  5. Loved it! I only had short wooden satay sticks so made do and had shorter kabobs. I also realised too late that I should have threaded entire sections of onion onto the sticks as the smaller pieces got too crispy, but that was my fault entirely. A very healthy and tasty dish that was easy to put together and where the chili/cumin mix gave a zing to the veggies. Please see my rating system: a lovely 4 stars. Thanks!
